I love this recipe because not only can you may this gluten-free, grain-free and sugar-free, but you can make this a super nutrient dense meal to given to your family by opting for a blend of beef and organ meats to use as the meat portion of the Enchiladas. Basically, if your family doesn't care for organ meats, you can disguise it in this recipe and still get your family to eat organ meats.

You can also substitute beef for chicken if you prefer chicken enchiladas.
This recipe utilizes a lot of Siete products. I can't say enough good things about this line. They use Avocado Oil in their products rather than vegetable oils and they use only clean ingredients in their seasonings and sauces.
What you'll need:
1 Package of Siete Almond Flour or Cassava Flour Tortillas
1 Jar Siete Red Enchilada Sauce
1 Packet of Siete Seasoning
1-lb Grass-fed Grass-finished Ground Beef or Ground Beef/Organ Blend
~ 1 Cup shredded Raw Cheddar
1/2 Diced Organic Yellow or Red Onion
Diced Organic Black Olives (Optional) to top
Organic Sour Cream (Optional) to top
Fresh Organic chopped Cilantro (Optional) to top
Fresh diced Avocado (Optional) to top
Directions:
Pre-heat oven to 350 F.
You will need to slightly heat all your tortillas to prevent them from breaking when you fold them to bake them. I recommend heating the tortillas for 1 minute or so on each side which will make them a little more durable so that they won't break. If you skip this step with these specific tortillas, they will break when you try to roll them up.
Sautée diced onion (1/2 to 1 whole onion) until golden brown in butter, tallow or avocado oil.
Add your meat blend to the pan with 1 packet of Siete Seasoning and cook. Try not to brown it.
Once meat is cooked, assemble tortillas. Roll up tortillas with your beef/onion blend and place into rectangular baking pan with parchment paper.
Once fully assembled, top tortillas with about 1/2 to 1 whole jar of Siete Enchilada Sauce.
Once you've topped with Enchilada sauce, top with shredded Raw Cheese.
Bake at 350 for about 20 minutes.
Once finished baking, allow to cook for a few minutes.
If desired, top with Cilantro, Black Olives, Avocado and/or Sour Cream.
