Homemade Gluten-Free Tuna Cakes





This is a pretty versatile recipe in that you could use either canned Wild caught Salmon, canned Wild-Caught Tuna or canned Chicken. Pro-tip: COSTCO has canned Wild caught Salmon and canned Wild-Caught Tuna. They have a special brand which is even pregnancy safe and tested (each can) for Mercury. You can also go to www.safecatch.com to purchase.






What you'll need:


  • 2 cans of Wild Caught Tuna or Salmon

  • 2 Egg yolks

  • 1/4 Cup organic Almond Flour

  • 1/4 Cup grated Parmesan Cheese

  • Salt and pepper to tast


Directions:


  1. Mix Wild Caught Tuna (or Salmon), egg yolks, almond flour, cheese and salt/pepper in a mixing bowl.

  2. Once mixture is fully combined, shape into patties.

  3. Pan fry patties on medium heat until golden brown (around 6-8 minutes) with a flip mid-way through.

  4. Option to garnish with more cheese and Parsley.
